Peachy Keen: Farm to Table Recipes

Fresh peaches are one of summer’s sweetest rewards. Pick up a few at your local farmers market or farm stand and bring that just-picked flavor to the table with two simple seasonal recipes.

Whether you’re craving something fresh and scoopable or a sweet-and-savory dinner idea, these peach-forward recipes make the most of the season.

Peach Salsa

Fresh peaches add a sweet summer twist to this easy salsa. Serve it with tortilla chips or pair it with your favorite grilled dish.

Ingredients

  • 2 large peaches
  • 1 Roma tomato
  • 1/2 red onion
  • 1/2 jalapeño pepper, seeds removed
  • Fresh cilantro
  • Juice from 1 lime
  • Salt and pepper to taste

Instructions

Cut peaches into 1/2-inch pieces and place in a large bowl. Set aside.

Roughly chop tomato, onion, jalapeño and cilantro and add to a food processor. Pulse until pieces are small but not pulverized.

Combine tomato mixture with peaches. Refrigerate for two hours to allow the flavors to meld.

Peach and Prosciutto Flatbread with Hot Honey

Sweet peaches, creamy burrata, salty prosciutto and a drizzle of hot honey come together in an easy flatbread that feels special without requiring a lot of work.

Ingredients

  • 2 naan flatbreads
  • Extra virgin olive oil
  • 8 ounces burrata cheese (two balls)
  • 1 large peach, sliced
  • Sea salt to taste
  • 8 slices very thin prosciutto
  • Hot honey
  • Fresh basil leaves
  • Crushed red pepper flakes

Instructions

Heat oven to 400°F. On a baking sheet, place two flatbreads. Generously brush with olive oil.

Add peach slices to flatbreads. Tear each burrata ball into several pieces, then tuck them between peach slices. Sprinkle with sea salt.

Crumple prosciutto slices and add to flatbreads.

Bake flatbreads for about 10 minutes. Then turn the oven to broil and continue to cook until prosciutto is crispy and cheese begins to brown. Remove from oven.

Drizzle with hot honey and garnish with torn basil leaves and red pepper flakes.
